INTERESTING FACTS ABOUT BEETS
Beets are an excellent source of folate (B vitamin), and a very good source of the minerals manganese and potassium.
They also a good source of dietary fibre, vitamin C, magnesium, tryptopan, iron, copper and phosphorus .
The folate in beets is essential for normal tissue growth and necessary during pregnancy for developement of the fetus. l cup of beeets provides 136 micrograms of folate, with our daily requirement being 400 micrograms.
Betacyaynin is the pigment in beets that give them the rich color. Betacyanin is a powerful cancer-fighting agent. There are several studies that have shown beets effectiveness against colon cancer, and in studies of stomache cancer beet juice was shown to be a potent inhibitor of the cell mutations.
The leaves of the beet are a healthy addition to the diet. Beet greens are an excellent source of calcium, iron, magnesium and phosphorus.
They also contain vitamins A,B complex and C.
